Banana & Coconut Chia pudding

Hi fit friends.

I know I haven’t been around much, for which I’m sorry, but, it’s reached that time of year when my social and work life just goes insane.  However, I just wanted to pop onto my blog to say hello with a quick recipe to make sure you hadn’t forgotten about me!!!

So, I was having my daily pre-bedtime browse through Instagram yesterday and saw a post someone had put up with a picture of a Chia pudding they had bought from Wholefoods.  I have seen these before and they look delicious, but as I don’t have a wholefoods near me (and to be honest they are a tad expensive for what they are), I had a thought to come up with my own quick version using the ingredients on the front of the packaging.  In my moment of motivation, I rushed to the kitchen, picked up 4 ingredients and got cracking… I

  • Mashed half a banana
  • Added 1 TBSP chia seeds
  • Added ¾ cup coconut milk
  • And a dash of cinnamon

Before pouring it all into one of my trusty jars (if I could eat all my meals out of jars… believe me I would) shaking it, popping it into my fridge and hoping for the best *crosses fingers*

Then this morning after my workout, I decided to top the above with raspberries that were at risk of going off… and it was delicious!

Sometimes the simple recipes really are simply the best.

In other news, I have signed up for a Crossfit taster class next Tuesday… which I’ve always wanted to try but I am SOOOOO nervous about going to as I know the gym (box) will be completely different to what I am used to.

What are your Crossfit experiences?

Anyway I’ll hopefully be back to spend more time on here soon as I really do enjoy writing and sharing my thoughts with you.  In the meantime I hope you are all enjoying and continue to enjoy the build up to Christmas and all the treats on offer this fine season (in moderation obvs)!!
