Paleo Choc chip cookies

Good morning fit friends!

Hope you have all had a fit & healthy weekend. 

Last week I completed my Crossfit ONRAMP and took part in my first proper sessions this weekend.  I’ve absolutely loved my classes so far where I’ve been able to learn some new lifts and start to improve on my technique!

Starting Crossfit got me thinking about the Paleo diet that seems to go hand in hand with this style of functional training, which is made up of movements we perform in everyday life, such as squatting and lifting.

Yesterday, I came up with a Paleo Cookie recipe that I wanted to share with everyone

What is Paleo?

The Paleo diet; also known as the caveman, hunter-gatherer, Stone Age and primal diet, is a diet based on the presumed eating regime of our ancestors.  The diet works on the principle that human genetics have remained unchanged since the birth of agriculture thousands & thousands of years ago.

The diet has gained a huge following especially within the Crossfit community that is also increasing in popularity as we speak.

In a nutshell the Paleo diet is made up of any foods that can be ‘hunted’ or ‘gathered’… 

Included

Excluded

Meat

Grains

Fish

Legumes

Vegetables

Dairy Products

Eggs

Refined Sugars

Nuts

Refined Salts

Fruits

Processed foods

 

The diet is quite controversial among dieticians with many coming up with reasons for and against it.

I myself am very tempted by the benefits of a Paleo diet (especially since I have suffered from Allergies and bloating in the past) which are said to include the following,

  • More muscle/less fat
  • Less to no bloating
  • Reduced Allergies
  • Reduced Inflammation
  • Increased Energy
  • Improved Sleep
  • Healthier gut
  • Clearer skin

On the flip side, some see the Paleo diet as quite a restricted diet and for me this is a definite Con… am I ready to give up my beloved Oats & Peanut butter (who knew Peanuts where a legume)?

There is lots of further reading on the Paleo Diet, including reading on a ‘Paleo Template’ which may be more fitted to individual circumstances and the lifestyles we lead today.  An interesting article to read on this is; Beyond Paleo: moving from a “paleo diet” to a “paleo template” by Chris Kresser.

Paleo Choc chip cookies
Yields 9

Ingredients
  1. 1 cup Almond Flour
  2. 1 Tbsp Coconut flour
  3. 1 tbsp coconut sugar
  4. 1/2 tsp baking soda
  5. 1/2 tsp baking powder
  6. Pinch Salt
  7. 1 heaped Tbsp Coconut oil
  8. 1 tsp Vanilla Extract
  9. 1 egg
  10. 2 Tbsp Honey
  11. 2 Tbsp Dark Chocolate drops
Instructions
  1. Preheat the oven to 180° (350)
  2. Combine all dry ingredients in a bowl.
  3. In another bowl beat the coconut oil, vanilla extract and honey
  4. Add the egg and beat again
  5. Add wet ingredients to dry and mix
  6. Stir in Dark Chocolate
  7. Add 1tbsp blobs to a well greased baking sheet or parchment paper
  8. Bake at 180° (350) for 10-12 minutes

  1. Double the recipe for more cookies - I only did this many to test out the batch!
