Paleo Guacamole

Having to cook for friends whilst on the Whole 30 plan isn’t always an easy feat.

I usually troll the internet for some inspiration in order to make a show stopping piece and more or less always try something new.  Which is especially the case when you have the best home cook you know coming over for dinner (I hope he doesn’t judge!)

So needless to say, last nights planning was challenging!

However, being on the Whole 30 however, does make you think tremendously about flavour.  If I don’t have free reign, you have to be creative – or at least give them something to make their tastebuds tingle with delight.

It was this that made me turn to my savour during the Whole 30 so far…

I have discovered the most perfect recipe which will delight you whether you are on the Whole 30 or not (and it is actually crazily simple).

To assist my Guacamole – because we all know that we can’t have guacamole as a meal (no matter how much I wanted to) – I made my usual Chilli (minus the legumes of course) and some crispy Sweet Potato Fries and it was delicious… my guests were very complimentary and I was glad I didn’t have to cook extra or differently for them; although they did get sour cream which is my most favourite thing on earth!!!

So, to make the Guacamole, heres what you will need.

  1. 1/2 small red onion
  2. 1 Clove Garlic (I did use garlic powder last week when I ran out)
  3. 1 avocado
  4. 1/2 lime
  5. A few Dashes of Tobasco
  6. Pinch of salt

How to:

Finely dice the red onion, mince the garlic and add to a bowl.  Then scoop out your avocado and mash this into the bowl with the onion and garlic.  Add the juice of your 1/2 lime, a few dashes of tabasco and a pinch of salt and you are good to go (did I not tell you this was simple).

There are other things you can add to your Guacamole such as diced onion, coriander etc but with me being lazy and with this already tasting so good – why bother??

Question of the day!

What do you make for guests while eating Paleo & Whole 30?
